It is a lean meat, rich in proteins and low in fat making it a great option for low-fat menus. It is also low in cholesterol and salt whilst being a rich source of minerals.
The most famous dish is called “Conejo en Salmorejo” (Canarian style rabbit), although it can be prepared in a number of different ways.
